Ingrediants:
Potatoes - Boiled (4 medium) and sliced
White Sauce - 2 Cup
Cheedar Cheese - 1 Cup
Salt and Pepper
Ingrediants for the White Sauce:
Maida - 1 tablespoon
Butter - 1 tablespoon
Milk - 2 cup
Salt to taste
Cheese - 50 gm (this is optional and you can increase or reduce the quanity)
Method for making White Sauce:
Heat pan, add butter, wait for 2 min and add Maida. Stir maida for 20 sec and
turn off the gas. Add milk, salt and cheese and stir for 1 min till it mixes
properly. Turn on the gas and simmer at medium heat. When the sauce starts to
thicken, turn off the gas
P.S: You can add herbs (Oregano, Basil, Parsley etc) to this if
desired.
Method:
Taking a Baking dish, grease using butter/ghee/margarine, Line it with the sliced potatoes, sprinkle salt and pepper, Cheese and spoon the white sauce evenly. Repeat the layers till the potatoes and the white sauce are not over.
Finish with the layer of white sauce topped with cheese.
Pre heat the oven to 180 degree and put the dish and bake it for 40 min.
Serve Hot.
P.S: If you do not have a Oven, you can use the microwave at 100% for 20 min.

Corn and potato bake with a cheesy crust
INGREDIENTS
Creamed sweet corn 1 tin
Potatoes, boiled and diced 5 large
Oil 1 tablespoon
Onion , finely chopped 1 medium
Milk 1/2 cup
Salt to taste
Black pepper powder 1/2 teaspoon
Butter 3 tablespoons
Bread crumbs 3/4 cup
Cheese, grated 3/4 cup
Method
Heat oil in a pan, add onion and cook for 2 min. Add potatoes and butter (1tbsp) and corn. Cook for a few min. Add milk and salt and pepper. Let it thicken.
Pour in a greased baking dish. Cover with bread crumbs. Pour remaining butter in. Cover with grated cheese and Bake at 160 degrees for 20 min or until the cheese starts to brown.

CHOCOLATE BROWNIES - eggless
Cooking Time : 20 minutes
INGREDIENTS
Dark chocolate 100 grams
Refined flour (maida) 1 1/4 cups
Baking powder 2 teaspoons
Walnuts, peeled 1/2 cup
Butter 130 grams
Castor sugar (caster sugar) 1 1/4 cup
Vanilla essence 1 teaspoon
Milk 3/4 cup
Oil for greasing
METHOD
Sift flour and baking powder and keep aside. Chop walnuts. Grease a round microwave dish and line it with butter paper. Combine chocolate and butter in a large microwave bowl and soften, uncovered, on Microwave HIGH (100%) for one minute. Beat in sugar, vanilla essence and blend well. Add the sifted flour and nuts and mix well. Add milk to correct the consistency of the batter. Pour the mixture into a greased bowl. Place the bowl on an upturned saucer and cook, uncovered, on Microwave HIGH (100%) for seven minutes. Allow standing time of five minutes. Insert a skewer, if it comes out clean it is done. If not, cook, uncovered, on Microwave MEDIUM (60%) for two more minutes. Place on wire rack to cool. Cut into squares and serve with tea or coffee.
Marble Cake - Eggless
Ingredients
Flour - 1 1/4 cups
Milk powder - 3 tbsp
Baking powder - 2 tsp
Baking soda - 1/2 tsp
Butter - 1/2 cup
Powdered sugar - 3/4 cup
Milk - 3/4 cup
Vanilla essence - 1 tsp
Cocoa powder - 2 tbsp
Hot water - 2 tbsp
Grated Orange Zest - 1 tsp
Method
Preheat oven to 170C.Grease a 6 cup Bundt pan or a regular 7' round/square pan.
Sift together flour,milk powder,baking powder and baking soda,keep aside.
Pour hot water on cocoa powder and mix well to form a paste,let it cool.
Cream the butter and sugar till light and fluffy.
Add the flour mix and milk alternately,starting and ending with flour to get a smooth batter.
Transfer a little less than half the batter to a pan.Add the cocoa paste to it and mix well,add the orange zest.
Add vanilla to the remaining batter.
Pour all of the white batter into the prepared pan.Top with the chocolate batter.Swirl the batter using a table knife-do not over do it.
Bake for 40 minutes or until a toothpick inserted comes out clean.Cool in the pan for 10 minutes,then unmould and finish cooling on a rack.
Dust with cocoa powder on top and cut into thick slices.

Aloo cutlet - simplified
Ingrediants:
Boiled Potatoes 500gm (mashed)
Ginger - grated (no paste) - 50 gm
Green Chillies - 10pcs - finely chopped
Lemon juice - 3 tsp
Salt to taste
Black Pepper - 1/2 tsp
Corn flour - for binding
Bread crumbs - for wraping the cutlets
Method:
Mix all the ingrediants (other than bread crumbs). Make flat patties. Wrap in Bread crumbs and fry in Hot oil.
Server with Green chutney and onion rings.

Aloo Dum (Instant)
Ingrediants:
Aloo: 500gm Peeled : small
Onion: 1 Kg: chopped as julians
Garlic: 4tsp: crushed
Ginger: 2 tsp: crushed
Green Chillies: 3 tsp: Paste
Garam Masala 2 tsp
Red chillie powder 2 tsp
Corriander powder 2 tsp
Black Pepper 1 tsp
Salt to taste
Lemon juice if required
Chat masala (as per taste)
Method:
Heat oil in pressure cooker, add Jeera (cumin seeds) 2 tsp, add Garlic, Ginger, and Green chilli. Fry for 2 min.
Add onions and fry for 5 min or till the onions turn light brown.
Add the peeled potatoes and all the remaining ingrediants. Mix properly.
Cook for 2 minutes. Add water, 1 cup.
Wait for 1 whistle at high flame, then reduce the whistel and simmer for 20 min.
Remove and let the pressure cooker open.
Garnish with Corriander leaves and serve with Pulao or chapati as desired.

Almonds - 200gms (yes it is almonds, i didnt mistype !! )
Corriander leaves: 1 tbsp (chopped fine)
Green chillies: 2 tsp (chopped fine)
Bread crumbs: 2 tbsp
Maida (Plain flour): 1 tbsp
Butter: 1 tbsp
Salt to taste
Garam masala: 1 tsp
Method:
Heat butter in a pan, add maida, and cook till it form a ball (approx 2 - 3 min).
Mix almonds (crushed), corriander leaves, green chillies, bread crumbs, salt, garam masala and the maida and butter mix. Add a little water. Mix properly to make a dough.
Note: Add more bread crumbs if unable to bind the dough.
In a bowl mix maida with water to form a batter.
Take some bread crumbs (fine) in another bowl.
Make small tikkis out of the dough, dip in maida batter, wrap in bread crumbs and fry in hot oil.
Server with green chutney.!
