This is as basic as it gets when you are fond of italian cooking. After lots of trial and error, i found that this mix works perfectly for me. Its not too cheesy, at the same time remains creamy and lip smaking tasty.
Butter - 1 tbsp
Maida flour - 1 tbsp
Milk - 2 cup (preferebly cold)
Cheddar Cheese - 1/4 cup, shredded
Salt and pepper to taste
Add butter to pan, heat for 2 min. Add maida and stir at high flame for 1 min. Turn off the gas. Add milk, cheese, salt and pepper. Mix properly.
Turn on the gas at medium flame. Keep stiring till the mixture comes to a boil. Cook for 2 min. Turn off the gas.
