Aloo cutlet - simplified

Ingrediants:
Boiled Potatoes 500gm (mashed)
Ginger - grated (no paste) - 50 gm
Green Chillies - 10pcs - finely chopped
Lemon juice - 3 tsp
Salt to taste
Black Pepper - 1/2 tsp
Corn flour - for binding
Bread crumbs - for wraping the cutlets

Method:
Mix all the ingrediants (other than bread crumbs). Make flat patties. Wrap in Bread crumbs and fry in Hot oil.

Server with Green chutney and onion rings.

Aloo Dum (Instant)

Ingrediants:

Aloo: 500gm Peeled : small
Onion: 1 Kg: chopped as julians
Garlic: 4tsp: crushed
Ginger: 2 tsp: crushed
Green Chillies: 3 tsp: Paste
Garam Masala 2 tsp
Red chillie powder 2 tsp
Corriander powder 2 tsp
Black Pepper 1 tsp
Salt to taste
Lemon juice if required
Chat masala (as per taste)

Method:
Heat oil in pressure cooker, add Jeera (cumin seeds) 2 tsp, add Garlic, Ginger, and Green chilli. Fry for 2 min.

Add onions and fry for 5 min or till the onions turn light brown.

Add the peeled potatoes and all the remaining ingrediants. Mix properly.

Cook for 2 minutes. Add water, 1 cup.

Wait for 1 whistle at high flame, then reduce the whistel and simmer for 20 min.

Remove and let the pressure cooker open.

Garnish with Corriander leaves and serve with Pulao or chapati as desired.

Nut Kebab

Perfect for a decadent cold evening with hot coffee or an irish !

Ingrediants
:
Almonds - 200gms (yes it is almonds, i didnt mistype !! )
Corriander leaves: 1 tbsp (chopped fine)
Green chillies: 2 tsp (chopped fine)
Bread crumbs: 2 tbsp
Maida (Plain flour): 1 tbsp
Butter: 1 tbsp
Salt to taste
Garam masala: 1 tsp

Method:
Heat butter in a pan, add maida, and cook till it form a ball (approx 2 - 3 min).

Mix almonds (crushed), corriander leaves, green chillies, bread crumbs, salt, garam masala and the maida and butter mix. Add a little water. Mix properly to make a dough.

Note: Add more bread crumbs if unable to bind the dough.

In a bowl mix maida with water to form a batter.
Take some bread crumbs (fine) in another bowl.

Make small tikkis out of the dough, dip in maida batter, wrap in bread crumbs and fry in hot oil.

Server with green chutney.!

Paneer stuffed Bread

Ingredients:
Paneer (homemade) , crush it.
Onion : chopped fine
corriander leaves : chopped fine
Green Chillies: chopped fine
Salt, pepper.

Add everything together and mix well.

Spread some of the mixture on a bread slice and cover with another slice. Cook on hot tawa using a little butter. :)
You will love this calorie filled snack

Thai Green Curry

Ingredients for the paste: (Serves 4 people)
Coriander leaves: 5 table spoon (chopped fine)
Onion: 1 large (chopped)
Ginger: 1 tsp Garlic: 1 tsp Lemon Rind: 1 tsp Green Chillies: 10 to 15 (according to taste)Cumin seeds: 1 tsp Whole black pepper: 1/2 tsp Oil : for grinding

Put all the ingredients in the mixer grinder. The paste should be fine.
Note: Do not use water while grinding the mixture.

Ingredients :
Paneer : 250 gm (chopped into small pieces)
Carrot : 50 gm ( chopped) Capsicum: 50 gm (chopped) Onion: 2 medium ( chopped fine)Lemon Leaves: 2 - 4 leaves
Coconut milk : 400 ml

Take a pan. Pour some oil. Add chopped onion and Lemon leaves, and fry for 1 min. Add the curry paste and cook for 2 min. Add the paneer and vegetables(partially boiled) to the paste and cook for 2 min. Add coconut milk and let it come to boil on slow flame.

After that add salt, sugar(1/2 tsp) and lemon juice (4 tsp)

Serve hot with Plain rice.

Quick fix pasta in Red Sauce

Ingrediants
Pasta 250 gm (Boil in hot water with 1 tbsp oil till soft)
Red Tomatos 750gm (Boil, peel and chop fine/grind)
Green capsicum - 100gm (Cut into cubes)
Red Onion - 200gm (cut into cubes)
Carrot - 50 gm (cut into cubes)
Garlic 50gm Crushed
Tomato sauce
Vinegar
Oregano (optional)
Tobasco sauce (optional)
Salt and Black pepper.

Preparation:

Take a non stick pan, pour 2 tbsp oil and heat. Add crushed garlic and fry for 30 sec. Add onion and fry for 2 min (till translucent). Add capsicum and carrot and mix. Add pureed tomato, salt, pepper, tomato sauce, vinegar 1tsp, oregano 1tsp, tobasco sauce 1tsp, red chilli powder 2tsp. Cook for 20min on slow flame.

Add bolied pasta and mix well. Remove in a oven proof dish. Garnish with cheese and bake in oven at 160 degree for 30 min.

Serve hot with garlic bread and veg Augratin (recipe for these are coming soon)

Kala Kebab

Ingrediants:

Horse gram (red) - 200 gm (soaked over night and boiled )(crush in Mixer till rough paste)
Potato - 2 (big) - bolied and masshed
Garlic, ginger and Green chillie paste.
Salt to taste
Pepper - 1 tsp
Garam masala - 1 tsp
Red chillie powder - 1 tsp
Sooji (rava) - to bind the dough.

Method:

Mix all the ingrediants. Make small flat balls out of it.

Heat oil in pan for frying.

Fry the balls till golden brown. Remove and sprinkle chat masala and lemon juice.

Serve with green chutney / tomato sauce and sliced vinegar onions.

Cheesy Paneer Kebab

Ingrediants:

Cheese (cedar) - 100 gm (grated)
Panner - 100 gm (Grated)
Potato - 2 big - boiled and grated
Ginger paste - 1 tsp
Green chillie paste - 1 tsp (you can add more if desired)
salt to taste
pepper - 1/2 tsp
lemon juice - 2 tsp
Rava / sooji for binding.

Method:

Put oil to heat in a pan.

Mix all the ingrediants. Take a small quantity and make oblong shape from the dough , wrap in dry rava and fry in oil till golden brown.

Serve with Green chutney / tomato sauce.

Shahi Pulao

Ingredients:

Rice - 2 cups (Boiled and cooled) (Basmati prefered)
Peas: 1/2 cup - Boiled
Cashewnuts - 1/4 cup - cut in small pieces
Raisins: 2 spoonful
Kewra essence - 1 tsp
Rose water - 2 tsp
Garam masala
Salt
Pepper
Ghee

Procedure:

Pour ghee in a pan, add cumin seeds (1tsp), roast for 10 sec. Add cashew and peas and cook for 1 min, add raisins. Add the kewra essence, rose water, salt, garam masala, pepper and Boiled rice.

Mix properly and serve hot with Aloo Dum.

Minestrone Soup

Ingrediants:
Tomato : 1 Kg (Boiled and Pureed and sieved)
Vegetables : Capsicum, carrot, peas, cauliflower, Beans (chopped small and par boiled)
Onion – Chopped small
Garlic paste
Butter

Method:
Heat butter in pan, add garlic paste , cook for 1 min, add onion , cook for 2 min. add vegetables and cook for 5 min. Add the tomato puree . Bring to boil.

Add salt, sugar, pepper and tobasco sauce.

You can also add some boiled pasta and paneer pieces.

Aloo Kurkure

This is a yummy snack and can be prepared in record time :)

Ingrediants:
Aloo : 1 kg: Boiled and mashed

Add, salt, pepper, green chilli paste, ginger paste, garlic paste, lemon juice, chopped coriander leaves. Add mashed potato , bread crumbs and mix well.

Crush Beaten rice in mixer coarsely.. Make a paste of white flour and salt, chilli sauce.

Make a oblong shape from the 9mix, dip in paste of white flour, and wrap in the beaten rice.

Deep fry till golden brown.

Serve hot with Green chutney and onion rings

Potato Cheese Kebab

Ingrediants:
Aloo, Paneer, Cheese, ginger, garlic, green chilli paste, salt, pepper, lemon juice, Corriander leaves.

Procedure:
Mix all the ingrediants and make a dough. Add Bread crumbs/ rava to bring the dough to the frying consistency.

Shape into flatened rounds and deep fry untill golden brown.

Serve with onion rings and green chutney.

Instant Biryani

Ingrediants:
Garlic, ginger, green chilli, pudina leaves ; make a paste
Tomato – 200gm- pureed
Vegetables- Capsicum, carrot, peas, cauliflower, Beans, Paneer (par boiled)
Rice – boiled.

Heat oil in pan, add paste. Add vegetable. Add tomato puree. Cook for 10 min. Add salt, pepper, garam masala. Mix well. Add rice and mix well.
Garnish with coriander leaves.

Serve with Raita and onion rings
